All you need is a glance at the diverxo.com site to enter into the astonishing world of David Munoz, the most brilliant three-star chef in Spain. Hair combed to a peak and piercings, this young chef is explosive and volcanic in his looks as well as in all he does. As a good rock chef, as he is rightly defined, he is true to the motto “he who stops is lost”, so in the span of just one year he signed an agreement with the NH Hotel Group, the chain with 400 hotels scattered all over the world (and new acquisitions in Latin America), and moved his consolidated DiverXO in Madrid to inside the central Eurobuilding. If you are lucky enough to book a table in the nice dining room created according to David’s specifics – with sculpture copies of piglets, colored enormous installations of ice-cream cones, black butterflies and more of his ideas – you can better understand what moves the soul of this young and revolutionary cook. Inspired by fusion, Mediterranean and Chinese cooking with some Japanese influence, the menu changes all the time and often new dishes will suddenly be added, for that quirky improvisation that only a very few know how to handle. There are two choices, 145 and 200 Euro, depending on the time available to savor a more or less broad menu. And although Munoz keeps mum as to his dish of the day, there’s one thing that he splurges emotions on, citing as one of his preferred sources of inspiration the shows put on by the Cirque du Soleil. It’s like saying, more than spectacular creations pirouettes with no net and with no limits.
